Gorse opened its doors in May 2024 and earned a coveted Michelin star just over eight months later, becoming the first restaurant in Cardiff to ever do so.
Tom Waters is the chef behind Gorse in Pontcanna and is driven by the abundance of incredible produce that Wales and the wider UK has to offer. Combined with exacting technique and attention to detail, Gorse is all about delivering simple, flavour-centric food in an unpretentious and relaxed environment. It’s a privilege to work with Tom who shares my vision for creating unique pieces that sit so well in the calming paired back dining room at Gorse.
